WHITE DOUBLE CHOC CARAMEL SLICE


My take on a good old Caramel Slice! It includes choc chips in the base, in the caramel as well as the delicious white chocolate top. Finished off with Lindt Hot choc flakes on top. A perfect sweet treat for the lunchbox that freezes well and that the kids will love!
INGREDIENTS:
Base
120g Unsalted butter
140g caster sugar
1 egg
1 Tsp Vanilla Extract
Pinch of Salt
1 Tsp Vanilla
1 1/4 Cup Plain flour
3/4 Tsp Baking Powder
1/2 cup White Choc Chips
Caramel
1/2 Can Plant based condensed milk (see note below)
3 Tbs Golden Syrup
25g Unsalted Butter
2 Tbs White Choc Chips
Choc Top
150g White Choc
2 Tbs Coconut Oil
Lindt Hot choc flakes
METHOD:
- Preheat your oven to 180 degrees
- Line a slice tray with baking paper
- With an electric mixer, beat butter and sugar until creamy. Add egg and mix until well combined
- Add salt and vanilla, beat until well combined
- Add in sifted flour & baking powder. Combine well
- Stir through white choc chips
- Pour mixture into tray and bake for 10 to 15 min until slightly golden
- In the meantime in a small saucepan, add condensed milk, syrup, butter and white choc chips. Cook until golden, approx 5 to 10 minutes
- Pour over baked base and put back into the oven for approx 10 min
- Once the base has finished cooking, heat white chocolate and coconut oil on short bursts of 30 sec in microwave until melted. Stirring between each burst. Once melted pour over base and top with chocolate flakes
- Pop into the fridge for a few hours to set
- Once set cut into bite size squares
NOTES:
- A great alternative to the regular condensed milk, but regular condensed milk can also be used
- For a thicker caramel, double the caramel ingredients
- Freeze in between sheets of baking paper
- Add frozen into lunch box & it will be defrosted by lunchtime
